
Ginger Glaze for Ham
Ingredients:
- 3 sachets Jamaica Mountain Peak Instant Ginger (Unsweetened)
- 2 tablespoons yellow mustard
- 1 1/2 cups brown sugar
- 1 can (20 oz) pineapple slices
- 1 teaspoon lemon juice
Directions:
- Slit the rind of the ham
- Trim the rind of ham leaving a 1/4″ layer of fat on ham
- Make diagonal cuts along the surface of the ham on the fat layer, making sure to penetrate the meat
- Make diagonal cuts in the opposite direction, forming diamond shapes in the fat layer
- Mix ginger, mustard, pineapple juice (drained from can) and lemon juice in a bowl and brush over ham
- As the ham cooks, occasionally brush it with extra glaze
